É importante comer devagar e mastigar bem os alimentos. Pesquisadores descobriram evidências, ao longo dos anos, que quando as pessoas devoram os alimentos acabam consumindo mais calorias do que quando se alimentam num ritmo mais lento. A ingestão mais rápida age diretamente sobre hormônios. A insulina e hormônios foram medidos antes, durante e depois do sorvete em pesquisa.
Cientistas descobriram neste estudo que quando um grupo de participantes recebia uma porção idêntica de sorvete em diferentes ocasiões, eles liberavam mais hormônios que davam a sensação de saciedade quando tomavam o sorvete em 30 minutos, em vez de 15. Os cientistas coletaram amostras de sangue e mediram a insulina e os hormônios do trato intestinal antes, durante e depois do sorvete. Eles descobriram que dois hormônios que sinalizam a sensação de saciedade, ou de “estar cheio” mostraram uma resposta mais pronunciada quando os participantes tomaram o sorvete mais devagar.

“The Journal of the American Dietetic Association” em 2008: Nesse estudo, os participantes relataram maior saciedade e consumiram aproximadamente 10% menos calorias quando comeram devagar, em comparação a quando simplesmente engoliram os alimentos.,
“The British Medical Journal” 3 mil participantes. As pessoas que informaram comer rapidamente e comer até se sentirem “cheias” tiveram risco três vezes maior de estarem acima do peso em comparação a outras pessoas.
Conclusão comer devagar e saborear mais os alimentos é bom e não “dói” e pode aumentar a sensação de saciedade, reduzindo assim a ingestão de calorias.
