A Sopa de Mandioquinha com Flocos de Quinua fornece vitaminas (especialmente a vitamina A, presente na mandioquinha, e o ácido fólico das folhas verde-escuras), além de minerais (como o ferro e o cálcio, também presentes nas folhas verde escuras como a couve e o espinafre), fibras e proteÃnas de ótimo valor biológico (encontradas especialmente na quinua). Vale a pena experimentar (e recomendar).
Ingredientes:
1 colher (sopa) de azeite de oliva, de preferência, extra-virgem
1 dente de alho picado finamente
¼ de xÃcara (chá) de cebolinha picada finamente
2 xÃcaras (chá) de mandioquinha cortada em cubos
2 colheres (chá) de Sal
1 e ½ litro de água mineral
2 xÃcaras (chá) de couve picadas em tiras finas
2 xÃcaras (chá) de espinafre picado em tiras finas
½ xÃcara (chá) de Quinua em Flocos
Modo de Preparo:
Em uma panela, coloque o azeite, o alho e a cebolinha. Acrescente a mandioquinha e o sal e deixe cozinhar por 10 minutos, misturando sempre. Adicione a água e cozinhe por mais 5 minutos, depois coloque a couve e o espinafre e deixe cozinhar por mais 2 minutos. Desligue a chama, acrescente a quinua em flocos e sirva.
