Leite e Cálcio: con
sumo e biodisponibilidade
Cada vez mais, as indústrias alimentícias desenvolvem novos produtos com a finalidade de melhorar a alimentação da sociedade. As novidades conquistam os consumidores fazendo com que antigos alimentos percam espaço na rotina diária.
Essa adaptação esta correta? Depende. Substituir o leite de vaca pelo “leite de soja”, por exemplo, pode ser uma conduta arriscada. O leite de vaca é a melhor fonte de cálcio comparado com a sua disponibilidade e é a melhor escolha para as pessoas que não têm alergias ou intolerância a lactose.
Segundo o estudo BRAZOS (Brazilian Osteoporosis Study – que envolveu 2.420 indivíduos acima de 40 anos de idade, de ambos os sexos e de todas as classes socioeconômicas, residentes das cinco regiões brasileiras), 99,6% da população avaliada apresenta tendência à ingestão inadequada de cálcio. Já a ingestão de fósforo esta acima das recomendações adequadas, o que pode desempenhar papel negativo sobre o metabolismo mineral e ósseo, uma vez que pode interferir na absorção de cálcio elevando o nível sérico do hormônio da paratireóide (PTH).
O “leite de soja” também é uma ótima opção para estar presente nas refeições saudáveis, mas atenção! Intercale, consumir sempre os mesmos alimentos e trocar a ingestão de alimentos nutritivos por outros nem tanto são os principais pecados cometidos à mesa do brasileiro.
